Half of the dough was baked in a form with a hole in the middle, baking for about 40 minutes. The remaining in a square silicone mold, (came out shallow), baking 30 minutes, came out that perfect and then cut it into small square pieces with a bruise to use cake in pastry.
Only because I was afraid because the dough was fluid, I put two tablespoons of flour in addition. It did not spoil it at all. I garnished with chocolate gouache & chocolate & candy flakes.
An excellent ganaz is made with whole milk, frozen couverture & little glucose. or drunken couverture & little sweetened milk.
