Trying her on my last trip to Skyros, I cooked it, as I ate there. After boiling the fava for 5 minutes, we throw the first water. Then boil it in some water until it softens & it is poured with the raspberries. Cook the chopped onion with olive oil, pour it into the feta, add salt, pepper and finely chopped fennel (I collected enough tb & put it in the freezer) and boil it a bit. Served as an appetizer in a bowl with gherkins.

ΦΑΒΑ ΣΚΥΡΙΑΝΗ (FAVA FROM SKYROS)
