Cut a rabbit into portions and marinate overnight in red wine, adding bay leaves, thyme and rosemary. The next morning, drain the rabbit pieces from the marinade and place them in a pot. (pan with lid). In the marinade soak two slices of bread, drain add a tablespoon pepper sauce, two -three dried tomatoes, salt, pepper and the liver of the rabbit & the mash.Add oil (rabbit meat is lean) and coat with the mixture pieces of rabbit. Cover the pot, firing nearly an hour in a moderate oven. (As needed the rabbit cooked without being dry). The result is extraordinary. Serve with mashed potatoes, basmati rice and green salad.
